Montmorency Cherry and Bacon Salad

12 slices thick cut bacon
2 tbsp extra virgin olive oil
1 tbsp Montmorency Cherry Balsamic
1 tbsp Native Grape red wine vinegar
1/2 tbsp Dijon mustard
1 shallot, finely diced
cherries, pitted and halved
goat cheese
salt

1. Cook bacon and reserve 2 tbsp of the rendered fat.
2. Mix bacon fat with olive oil.
3. Combine balsamic, red wine vinegar, salt, shallot, and dijon and allow to macerate.
   
4. Slowly mix in oil mixture while continuously stirring until emulsiphied.
5. Toss with veggies, chopped bacon, cherries, and goat cheese and serve.
