Asimina Paw Paw Balsamic | The Inn at Little Washington


Our second collaboration with The Inn at Little Washington! If Montmorency celebrates the orchard in full bloom, our Asimina paw paw balsamic looks deeper into the woods here on the farm where North America’s largest native fruit hangs heavy in late summer. Paw paws have long been a forager’s secret: custardy, tropical, and fleeting. We work fast to capture that delicacy at its peak.

While the fresh paw paws are fermenting, we add the warm, comforting spices that naturally frame paw paw’s softness: cinnamon, star anise, and vanilla. As the balsamic ages, these elements meld together with New American oak and give the vinegar a velvety richness and a lingering warmth. The result is a deep amber balsamic that tastes unmistakably Appalachian.
