Smoked Chile Vinegar


A side-product stemming from fermenting our own hot sauces, this is a composite vinegar that is both briny and deeply flavorful, made from our ramp, heirloom pepper, gardener, and hickory vinegars but seasoned with loads of facto-fermented hot peppers and JQ Dickinson salt, this is a spicy, smokey, savory vinegar that I’ve been using non-stop as a soy-sauce alternative. Wonderful for marinades, sauces, salad dressings and more!
